I recently saw a VW pickup. It kinda looked like a rabbit/el camino offspring. I have no idea what it's called or if it was in production. All I know is that it had a 5 speed manual and a diesel of some sort.

Yup! Known as the VW Rabbit Pickup, or the VW Caddy.

Yep. My friend had one that was on air suspension, and has a tiny little smoke stack coming out. It was jolly fun watching him blow out black smoke in front of the cummins in the parking lot.

Production indeed (though mine had a a four-speed). The first debut of the world market "Caddy" was in the US as the VW Rabbit Pickup made in Westmoreland, PA: I had an '81 diesel in red with over 200,000 miles and a fiberglass Leer bedcap.

My dad owned one for a while when I was younger... it could barely get over 60mph, and when it did, it would shake so violently the damn thing would start to suicide itself by literally shaking itself apart.

Never heard of the VW Pickup? Yep - made them in the early 80's.

They are a bit tricky to find in decent shape now, unless you want to pay a fortune. Those diesels didn't come with a turbo, so they are painfully slow. Swap in a more modern TDi, and you got your self a fun little FWD truck though. You could also weld yourself up a crew cab version:
